This Fish Stew is simple, flavorful and tasty. It takes less than 30 minutes from start to finish, and you can use your favorite firm, white fish!
2 tbsp. olive oil | |
1/2 whole white onion, diced | |
2 cloves garlic, minced | |
1/2 tsp. Ginger, diced | |
1/3 c vegetable broth | |
2 medium fresh tomatoes, chopped | |
4 cod fillets | |
½ c tomato sauce | |
1 whole red bell pepper, sliced | |
1 whole green pepper, sliced | |
½ tsp curry powder | |
½ tsp cumin | |
½ tsp paprika | |
1 tbsp fresh cilantro | |
Salt & pepper to taste |
1. | Start with oil in a large skillet. Add onion and garlic, ginger, cook until fragrant (3 mins). |
2. | Then, add fresh tomatoes, curry powder, cumin, paprika. (cook for 2 minutes) |
3. | Add tomato sauce and broth, then stir. Give mixture a stir and allow it to cook for about 5 minutes or until the tomatoes give a darker color. |
4. | Next add sliced peppers and cod chunks. Season with salt, pepper. Cover and allow fish to simmer for 10-12 minutes. About 3/4 of the way carefully turn the cod pieces. |
5. | When done, remove from stove and sprinkle fresh cilantro. Serve over quinoa or rice. |
