Fairfield, Connecticut mom of 3 Jenny McCollum shares her favorite salmon recipe that is super simple, customizable to everyone in the family, and her kids love:
Grilled salmon is one of my family’s favorite ways to enjoy our favorite fish. I marinate a tail piece (the tail usually has fewer bones) with salt, pepper, onion powder, garlic powder, a Tbsp of olive oil and half a lemon, squeezed and tossed into a plastic bag for about a half hour. With the grill on high heat, I coat a paper towel with olive oil and rub it along the grates of my grill with a long set of tongs. Then starting with the skin side up, I put the whole salmon on the grill and let it cook for about 8 minutes. Then I flip the entire piece with a large spatula and let it cook for another 6-8 minutes or until the salmon easily flakes when cut with a fork. I squeeze a little bit more lemon on the top and then serve to each kid with their preferred dipping sauce. Of course not one child in my house likes the same one: one likes teriyaki, one likes hot sauce and the third likes it plain. I typically serve this delicious fish with brown rice and kale chips. Definitely one of the yummiest and healthiest, favorite meals in our house!
